Famous candies made of coconut called Keo dua

South of Vietnam, there are several islands at the mouth of the Mekong River in Ben Tre where we stopped to visit a "manufactured home" of their famous candies made of coconut called Keo dua. The process is quite traditional, The dough is made in a pot with constant stirring, once it becomes almost sticky it is kneaded and stretched into large rectangles. It is then let to cool a little and cut and wrapped in thin paper made of rice paste. They also make popcorn rice, sweetened with sugar or honey, and rice wafers for wrapping famous Vietnamese spring rolls, which are exquisite. It's amazing to see the diligence and accuracy used to make rice wafers, especially how they handle them since they are stretched to be almost transparent so they can dry, and they never break any! The smell of the house is a delightful mix of "toffee", fried rice and coconut.
