Saint-Hilaire Abbey

We decided to visit this abbey located in the village of the same name because it is the birthplace of one of the most famous sparkling beverages from France: "The Blanquette de Limoux". I must admit that the visit was a success and we discovered a beautiful and peaceful place full of history and traditions, particularly related to the "Cathars". Before arriving, the road gives you pleasant views of rolling hills with vineyards. The visit to the Abbey can be done for free or as a guided tour. As they provide you with very good information, we decided to do for free so we could take our time. The highlight is its Gothic cloister and the remains of old cellars where monks created the famous sparkling drink in 1531.
