If I had to make a list of my favorite restaurants in Madrid, la Manduca de Azagra would be at the top, simply because it offers exceptionally quality food, based fundamentally on excellent prime materials, prepared in a traditional manner. There’s no need to be fooled by its modern decoration, this restaurant quite possible features the most traditions Basque/Navarrese cooking methods and dishes in all of Madrid.
It truly offers some of the most exceptional plates. The red peppers are one of the most subtle and succulent plates that I’ve ever tried. All of the specialties of the house generally have to do with fresh vegetables, and you can blindly follow their suggestions.
