Street food

David Muñoz is arguably the Spanish chef of the year: young, charismatic and very confident, especially after having received 3 Michelin stars for his first restaurant Diverxo, soon to open in London. However, if you want to try the cuisine of renowned chef with the crest in the head at more affordable prices, you need to enter the Corte Inglés of Callao. Just inside of this chain, in the scenic "Espacio Gourmet" on the ninth floor, is StreetXo, the restaurant of "street food" most well-known of the moment. We eat at the counter, on stools or standing, with music blaring, and the forks are plastic. It is the real price to pay for 'pretend' to be in an environment of road. The dishes, however, are impressive: Spanish cuisine revisited and in fusion with Asian. To give some examples: club sandwich with cottage cheese and steamed fried quail egg; Indonesian peanut sauce with meatballs and breaded frog legs; saam Iberian bacon with grilled mussels etc. All delicious. If you are lucky you will find David at the right cooker. And with the gorgeous kitchen, the show is guaranteed.

David Muñoz è senza dubbio il cuoco spagnolo dell'anno: giovane, carismatico e molto sicuro di sé, soprattutto dopo aver ricevuto 3 stelle dalla Guida Michelin per il suo primo ristorante DiverXo, che presto aprirà anche a Londra.

Se però volete provare la cucina del famoso cuoco con la cresta in testa a prezzi più accessibili, dovete entrare nel Corte Inglés di Serrano. Proprio all'interno di questa catena, nel panoramico "Espacio Gourmet" del nono piano, si trova StreetXo, il ristorante di "street food" più noto del momento.

Si mangia al bancone, in piedi o sugli sgabelli, con musica a tutto volume, e le forchette sono di plastica. È il vero prezzo da pagare per 'far finta' di essere in un ambiente di strada. I piatti però sono impressionanti: cucina spagnola rivisitata e in fusione con quella asiatica. Per darvi qualche esempio: sandwich club al vapore con ricotta e uovo fritto di quaglia; polpette con salsa indonesiana di arachidi e cosce di rana impanate; saam di pancetta iberica alla brace con cozze etc. Tutto delizioso.

Se avete fortuna troverete proprio David ai fornelli. E con la splendida cucina a vista, lo spettacolo è assicurato.

Fast food gourmet

In the 9th floor of the Corte Ingles Madrid's Callao, with sensational views from the terrace, we find, among others, the street version of the kitchen of David Muñoz (@ Dabizdiverxo), two Michelin stars. Product Quality and development from fusion of concepts, all at fast pace (no dish out more than 7 minutes) Kitchen "street" with a touch of culinary artist of the blades Sensational (olive oil and coal, with ponzu of sisho (or Japanese basil) and coconut cream), impressive grilled mackerel (paper topped with yuzu and miso sauce, smoked dried tuna, pickled onion and trout roe), great grilled tataki Butterfish , ...., and more. More than acceptable selection of wines (short, but the concept) very acceptable price (great value)

En la planta 9 del Corte Inglés madrileño de Serrano, con unas sensacionales vistas desde la terraza, podemos encontrar, entre otros, esta versión callejera de la cocina de David Muñoz (@Dabizdiverxo), dos estrellas Michelín.
Calidad de producto y elaboración basada en fusión de conceptos, y todo a ritmo trepidante (ningún plato sale en más de 7 minutos)
Cocina "callejera" con toques de artista de lo gastronómico
Sensacionales las navajas (al aceite de oliva y carbón, con ponzu de sisho (o albahaca japonesa) y crema de coco), impresionante la caballa a la brasa (rematada sobre papel con salsa de yuzu y miso, atún seco ahumado, cebolla encurtida y huevas de trucha), gran tataki a la brasa de pez mantequilla,...., y mucho más. Más que aceptable selección de vinos (corta, pero es el concepto)
Precio muy aceptable (relación calidad-precio magnífica)
